Plant-Based brownies


These brownies contain fruits and vegetables, and are completely vegan. Sounds like a salad! But believe me, they are some of the moistest, richest, chocolatiest, ‘melt in your mouth’ heavenliest brownies you'll ever taste. I first saw the recipe in Vitality magazine, so all the credit goes to them. I just changed some ingredients to my own liking. I hope you enjoy them as much as I did!

Ingredients:
  • ¾ cup ground oats
  • ½ cup pure cacao powder
  • ½ cup almond butter (homemade is best!)
  • ½ cup unsweetened apple sauce
  • ¼ cup coconut sugar
  • 1 cup shredded zucchini
  • ½ cup dark chocolate chips
  • 2 tsp vanilla extract
  • 1 tsp baking soda 

 Directions:

  1. In a bowl mix wet ingredients.
  2. Add dry ingredients.
  3. Mix in shredded zucchini and chocolate chips.
  4. Pour mixture into a pan and bake for 40 minutes at 350F.

~ Makes 12 two-bite brownies.

Part 3: How to make sugar-free cookies (using our coconut leftovers)

We made the coconut milk, we used the milk to make a matcha smoothie, now we use the coconut leftovers to make some yummy sugar-free cookies. "Sugar-free cookies? How can a cookie be sugar-free?" Don't despair, we will be using natural sweeteners instead of refined sugars to add sweetness to our yummy coconut cookies, because let's face it, every cookie deserves to be sweet.

For this recipe we will use a ripe banana, sun-dried raisins, cinnamon and raw honey to sweeten up our cookies. Let's get started! Click on the video below to follow along.

sugar-free coconut cookies

Ingredients:
  • 3/4 cup spelt flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1 egg
  • 1/2 cup coconut oil
  • 1 banana
  • 1 cup coconut leftover (or shredded coconut)
  • 1 tsp vanilla extract
  • 1/4 cup raisins
  • 1/4 cup raw honey
Directions:
  1. Pre-heat the oven at 375F. 
  2. Blend all ingredients, make them into little balls.
  3. Bake for 20 minutes. 
  4. Pour raw honey to taste, enjoy!
*Refined sugars act as preservatives. Since we are not using any, be sure to store the cookies in the fridge and consume within 5 days.

Part 2: How to make a Matcha Coconut smoothie in 1 minute

This is part 2 of my coconut milk video collection. We have made the coconut milk, now we are going to add a little bit of flavour to it for a delicious, nutritious smoothie experience! For this recipe I'm going to use one of my favourite superfoods, matcha powder! It is literally stone ground green tea powder, packed with anti-oxidants, fiber, chlorophyll and vitamins. Matcha helps fight inflammation and free-radicals. It can help lower cholesterol, provide an energy boost and prevent disease. In fact, one glass of matcha is equivalent to 10 glasses of green tea!

  • 1 ripe banana
  • 1 cup homemade coconut milk
  • 1/2 tsp matcha powder
